Elyse L’Espérance’s Favourites in the Eastern Townships

Élyse L’Espérance, President and Co-General Manager of PAL+ | Touristic Experiences, is opening up her personal address book today. Here’s her unique take on the Eastern Townships.

Can you describe the Eastern Townships region in three words?

Welcoming. Outdoors. Foodie.

What do you like best about the region?

I’m a big foodie: I love eating and drinking well. And lucky for me, gastronomy is truly a standout feature of the Eastern Townships! Plus, we have a wealth of local products at our fingertips and excellent restaurants. It’s easy to visit local markets, visit producers, and tour farms.

I also appreciate the natural side of the region. It’s a huge plus to be able to practice so many sports and have access to a variety of landscapes.

What is your favourite outdoor activity?

From spring to fall, I practice biking and hiking. I always look forward to winter for skiing―both touring and alpine skiing. It’s simple, the mountains aren’t far from my home. We can even easily switch between mountains without having to go too far.

When biking, what’s fun is obviously the beauty of the landscapes, but also the fact that, no matter what route you choose, you’ll pass through charming villages with great little cafés, ice cream shops, and markets. When I go on a longer ride, I try to stop at different spots.

Which restaurant do you always recommend?

I’m the type of person who loves trying as many restaurants as possible. I’m always on the lookout for new openings, wanting to discover the creativity of all the chefs. Of course, within the PAL+ group, we’re truly spoiled by the quality of our restaurants, whether it’s Bistro 4 Saisons, Burger Pub, OMG Resto, or Kóz Bistro!

In fact, for people visiting Magog, I often recommend Kóz for its very vacation-like atmosphere. You really feel like you’re getting away when you walk into the dining room (and even more so on the terrace!) The view of Lake Memphremagog always enchants me, no matter the season.

The Eastern Mediterranean-inspired menu, created by Chef Geneviève Filion, is absolutely sublime and highlights the local products of the region. I’m a big fan of her octopus dish; it’s always excellent. The whole fried fish and grilled shrimp are also fantastic. And don’t get me started about the muhammara dip…

When you want to introduce local delicacies, what do you offer?

I wouldn’t go for just one producer; I’d go for a basket because, in my opinion, it’s too hard to choose just one! For example, I think of fine cheeses from Fromagerie La Station or Nouvelle-France, sausages from Les Cochons Tout Ronds, or pâtés from Les Ducs de Montrichard, to name a few.

For a gift to drink, I often head to Cherry River distillery, located in an old church in downtown Magog, or one of the many microbreweries in the region. And for special occasions, I’ll offer a bottle of bubbly from the Le Cep d’Argent vineyard!

What would your ideal “staycation” in the region look like? What activities would you do?

I’d probably alternate between eating and doing sports, and maybe a little bit of relaxation. For example, I’d do a biking day with a long route, which would allow me to enjoy the lakeside landscapes and make a few stops at local markets. I’d start with a stop at a charming café and then grab a soft-serve ice cream at LeCornet (of course!) on my way back into town.

On another day, I’d focus on hiking at Mount Orford. When I would reached the summit, I’d be rewarded with an aperitif featuring local cheeses, cold cuts, a nice cold beer, and of course, the breathtaking 360° view!

The perfect rainy day activity?

A trip to the Nordic Station spa. It’s my go-to place for relaxation, a true haven of peace, and it’s not even 10 minutes from downtown Magog.

What do you think is the region’s best-kept secret?

Well, I’m definitely biased, but I think the gourmet cruises from Escapades Memphrémagog are truly amazing and unique! You discover the lake and its landscapes from a completely different perspective, and it’s just beautiful.

What role does the PAL+ group play in the region? And what makes the Versō hotel the ideal starting point for any adventure from Magog?

We’ve always wanted to showcase the region in its best light and act as a window into what it has to offer. Our mission is to provide access to all the great things happening here and share our passion for the region and the industry.

As for Versō, the hotel is perfect for contemplatives, those who like to take their time and enjoy being close to the water. It’s very central, and many of the activities mentioned above can be done on foot or by bike directly from the hotel. I’d say that at Versō, you feel the essence of the region, and from there, you can head out to discover other great spots in the Eastern Townships!
